SGOMBRO
Baked Spanish Mackerel, potatoes and cherry tomatoes.
Slice the potatoes with a mandolin and place them at the botton of the roasting pan, place the whole fish on top and dress it with salt, evoo and pepper.
Bake at 250 F for 30 mins or until the potatoes are crispy.
Paired with a Negroni.
1.25 OZ LUNA APERITIVO
1 OZ ETESIA GIN
1 OZ BELLIZZI MINA’ VINO AMARO ROSSO
Stir all the ingredients for 20-25 seconds, serve up with an orange twist.
