AMALFI COAST'S LEMON SALAD

3 LEMONS

400 GR FRESH DANDELION

5 GR LEMON JUICE

4 GR DON CICCIO & FIGLI LIMONCELLO

 3 GR EXTRAVIRGIN OLIVE OIL

1 GR WHITE WINE VINEGAR

PARSLEY

PINCH OF SALT

 

CAREFULLY WASH THE LEMONS, CUT INTO THIN SLICES, REMOVE ANY SEEDS, COLLECT THEM IN A BOWL, COVER WITH COLD WATER, ADD SALT, ADD LIMONCELLO AND VINEGAR, COVER AND LEAVE TO MARINATE FOR ABOUT 12 HOURS SO THAT THE WHITE PART OF THE LEMON SOFTEN.

DRAIN THE SLICES, PLACE THEM IN A SALAD BOWL, SEASON ACCORDINGLY TO TASTE.

SPRINKLE WITH CHOPPED PARSLEY AND SERVE.
